Hoomumma has been going into a trance all morning and needs to be spoken to (or barked at) twice before she noticed others. She made an excuse about it being day one of writing a new novel.

I've exceeded my word target today. 2,645 words done/50,000 #NaNoWriMo goal.

The difficulty is, the amount of people who enter Reg's room. I am in the corner writing.

I don't know how practical it is to write a novel with endless interruptions, but I will keep trying.

Hot Springs and superb meals.  Excerpt from the Gray Nomad travel diaries.
Grilled Barramundi and Sweet Potato Mash.
This is for two seniors  You can increase the quantity for higher calorie needs.
This meal is an ideal one for a couple to prepare together. Nothing like a bit of togetherness in the kitchen after a swim in the thermal pool. 

Ingredients
  • 1 cup of sweet potato, cut into 2cm cubes
  • Two chopped sprigs of parsley
  • 1 teaspoons extra virgin olive oil  and 1 tablespoon of butter
  • 2 teaspoons lemon or lime juice 
  • 1 teaspoons honey
  • 300g barramundi fillets
  • Two cups of predominately green vegetables in season, I used broccoli and shredded cabbage, plus some cauliflower in tonight's recipe variation. 

Method
  1. Place sweet potato in a microwave dish, covered with water, and cook on high for 6 minutes, 
  2. Combine the medium cooking time vegetables, cauliflower, broccoli with the the sweet potato. Return to microwave three minutes. Add the fast cook time vegetables, shredded cabbage, and chopped parsley, and cook for a further two minutes. 
  3. Drain the juices and keep for when you need Vegetable stock.
  4. After draining off the vegetable stock, add the lemon juice and honey, and mash them with a fork into the vegetables.
  5. Meanwhile, heat a non-stick frying pan, add the oil and butter (the combination decreases oil spitting, and adds to the caramelising of the fish, this adding flavour to the dish. Cook the barramundi in the heated butter and oil over high heat, turning once. About 2-3 minutes each side, do not overcook.
  6. After plating up the barramundi and sweet potato base vegetable mash, .our the vegetable stock back into the hot pan, stir around to remove all of the fish juices. You now have an excellent, and nutritious fish stock to enhance any savoury soup or stew recipe. Refrigerate and use within 24 hours or freeze for later use. 
  7. Serve fish with the warm, sweet potato mash.


Reg and I love visiting hot springs, and we are a couple of hundred kilometres away from the  Innot Hot Springs a natural mineral springs located between Ravenshoe and Mt Garnet on the Kennedy Highway to the hot springs of Nettle Creek. There is a sandy creek bed that bubbles with hot water and many locals and visitors come here to sit in the shallows of the creek and enjoy the healthy properties of the hot springs. 

Next door is the spas and pools of the Hot Springs Village. There are seven pools to enjoy all at different temperatures. The water of the springs gets up to 75 degrees Celsius 

I am not sure if we will get to Innot this trip though we most likely will be visiting a favourite hot spa area, Moree on our way home and taking in the hot artesian waters there 

Our favourite hot springs is Bitter Springs where you can swim among flowering waterlilies. That is my idea of paradise.  The Bitter Springs is a long flowing stream, and you can get excellent exercise by swimming upstream against the current. This is part of why I love those particular springs so much; it is a great workout in a naturally beautiful setting.

This video was so much fun to make, I hope you enjoy it as much as Reg, the cats, Tabby and Valentine and I enjoyed making it.     Staying independent and mobile, to be able to get myself out of a chair without assistance is my superwoman stunt at age seventy-five.
    Being blessed with an active and functioning mind, I can live with a mature age disability. I see this time as ideal to write mysteries full-time, tapping into a wealth of experience.

    Reg is still my partner in life and my love, although he lives in aged care. We have marriage by iPhone messenger, and visits.
    Reg approves of my plan to write romantic suspense once this cozy series is finished and published. He thinks my writing steamy sex scenes will keep me out of mischief.
